Fish and Chips seems to be a favourite amongst a few and we know deep frying can absorb one too many calories.
So, we have carefully developed with our trusted nutritionist, Cecile Vadas, a healthier version of the famous, Beer Battered Fish and Chips.
What you’ll need:
Ingredients:
1/2 cup plain flour
1 1/2 tbsp rice flour
1 tsp baking powder
1/4 tsp salt
3/4 cup cold beer
2 cod fillets (400 grams), cut into 4 length ways
1/2 cup vegetable oil
3 starchy white potatoes, cut into thick chunks
1 tbsp olive oil
1/2 tsp dried or 1 sprig fresh rosemary
Tatare Sauce:
2 tbsp mayonnaise
1 tbsp sweet pickle juice
1/2 pickle, diced
1/2 tsp dill or oregano
1 1/2 tsp smooth mustard
Method:
Step 1
Mix all the tartare sauce ingredients together. Set aside.
Step 2
In a medium bowl, mix together the plain flour, rice flour, baking powder, salt and cold beer until smooth.
Step 3
Pat the cod fillets with kitchen paper towel and place into the batter. Refrigerate for 10 minutes.
Step 4
Place the cut potato in a mixing bowl along with the rosemary, sea salt and olive oil. Mix well and place on a baking tray. Cook at 190 for 15 minutes or until golden, flipping half way through.
Step 5
Meanwhile, heat the oil in a small pan for 2 minutes. Add the battered cod, cooking until golden before turning over and cooking for a further 3 minutes. Drain on paper towel.
Step 6
Divide the chips and fish between two plates. Finish with lemon and the tartare sauce.
