Marinade:
1 1/2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp brown sugar
1 tsp chilli flakes
1/2 lime, juiced
1 tbsp sesame oil
2 garlic cloves, crushed
2 chicken thighs, skinless and boneless
Dressing:
3 tbsp lime juice
2 1/2 tbsp fish sauce
2 tbsp rice wine vinegar
1 tbsp mirin
2 small or 1 large garlic clove, sliced
1 birds eye chilli, sliced
1/4 cup water
1/2 tbsp brown sugar
Salad:
140 grams (2 small nests) vermicelli noodles
1/4 cup mint, finely chopped
1/2 cup coriander, finely chopped with stem
2 spring onions, finely sliced
1/2 Lebanese cucumber, diced
1/2 cos lettuce, sliced
1 tbsp peanuts
Method:
Step 1
Mix together the marinade ingredients in a medium mixing bowl. Add the chicken and leave to sit for at least 1 hour (best two but can also be overnight).
Step 2
Whisk together the dressing ingredients and set aside until needed.
Step 3
Cook the vermicelli according to the directions. Strain well and place into a large mixing bowl. Add the herbs, spring onions and three quarters of the prepared dressing. Leave to sit until chicken is ready.
Step 4
Once the chicken has marinaded, heat a grill pan (non stick pan with 1 tbsp olive oil otherwise) and place the chicken on the heat, smooth side down. Cook for 2-3 minutes each side (twice over), glazing the side that is up with the remaining marinade during cooking. Once cooked through, the pan should start to smoke (no juice is being released), place the chicken onto a plate and leave to rest for 5 minutes before slicing.
Step 5
To assemble, divide the noodles between two bowls as well as the cos, peanuts and cucumber. Divide the sliced chicken between the bowls and finish with fresh chilli, lime and extra dressing.
